Review: Skillet Bacon Spread (aka Bacon Jam)





You may be wondering what in the world bacon jam is.  I understand!  When I first heard of bacon jam I was intrigued and a bit confused as well.  Could it be possible that someone has captured the salty-smoky goodness of bacon and made it into a condiment?  The answer is yes... a big, fat, delicious, mouth-watering YES!

I had the pleasure of sampling Skillet Bacon Spread, which is bacon jam made by the proprietors of Skillet Street Food in Seattle, who describe it this way:

"What is bacon jam? Well, we take a big bunch of really, really good bacon and render it down...add a bunch of spices, onions, etc. and let it simmer for about 6 hours, give it a quick puree, blast chill it...take a left turn, and end up in pure bacon heaven."

I only received a small sample of Skillet Bacon Spread, so I had to choose a sole method of using it.  I wondered if I should add it to a grilled cheese sandwich or slather it on a burger... I considered many delicious possibilities!  I finally decided to saute sliced smoked sausage in sizzling hot bacon jam, which became the base for a delicious pot of Smoked Sausage Potato Chowder.  The only seasoning I used in my chowder was the bacon jam; it had a rich, savory flavor that my whole family enjoyed.
